PASSITO Gift Box

PASSITO is a wine made from Sangiovese grapes. The early harvest of partially under ripe grapes ensures the preservation of high natural acidity, which keeps the wine fresh and vibrant even after the drying process. For this stage, the grapes are laid outdoors in crates to dehydrate slowly under the sun, and they are added to the fermenting wine in three separate phases, each spaced a week apart. 

Fermentation takes place in open French oak tonneaux, with daily manual punch-downs. The prolonged maceration of the dried grape skins results in significant extraction, imparting Valmarone with a rich body and intriguing structure, balanced by a persistent crispness and an intense bouquet of dried fruit.
